From what I understand by reading many of these message threads, the JE high-compression piston with stock heads only raises the compression from 10.8:1 to 11.8:1.
That to get the full 12.8:1, you need the HRC race heads, which you'll probably never run across.
So I believe the OEM head gaskets should work fine.
If you are running aftermarket cams, it will be critical to check valve to piston clearances.
JD Hord or others may chime in for any corrections or additions if I'm in error.

Yes, the OEM head gaskets are fine.

I understand that the Cometic head gaskets add a little compression squeeeeeeze...anyone know how much?

It will be closer to 11.4:1 rather then 11.8:1. Its not the heads, its the valves and the combustion chamber area the HRC Ti flat bottom valves use up that makes up the CR difference, 3.5cc difference iirc.

10.8:1 OEM
11.4:1 with JE Hi-Comp or HRC copy pistons
12.5:1 with JE Hi-Comp or HRC copy pistons with HRC Ti Valves or similar.

The OEM gasket will work fine for STD bore. Cometic makes a nice one as well that will accept +1mm over. The JE Pistons have deep valve pockets and you would need very hi lift (> +2mm) cams or very wrong cam timing to run in to P-V clearance problems.

The standard .027 gasket is the same as OEM. Use any other gasket at your own risk.
