You have a few options for the oil cooler.
Mine is handbuilt.
Yours is made by Earls. Its a 3x13. You can get the same thing in 2" which will work, or you can move the bottom of the cooler behind the pipe. That is what I did when I was using the Earls part.

Yeah I saw how you tucked it behind the header, but you don't have a stock header, do you? My header is stock and it doesn't come out as far as yours. Not nearly enough for the oil cooler to fit. I Think I'm getting it to work but def gotta get a smaller cooler in the future. This size will be horrible incase of crash.

edit: I just went back through and re read every post, and scanned every pic. I did not realize you ordered what looks to be the CF skins. 400 lbs with no engine mods.

I remember when you first rebuilt this bike. I just went back and went through all 12 pages of this post. What a great build and a truly amazing bike. Glad to see you and the bike are doing well and winning (almost) some races. Keep the pictures and updates coming.
