when you pose this kind of question, it helps to include some of your intentions. like... where you do most of your riding... if you plan on track-days... what kind of features YOU like in a motorcycle... what you're currently riding... how much $$ you want to spend...
As a gross generalization, MY personal preference is a 7xx for a dedicated track bike and a 9xx for a dedicated street bike. For combo track/street use, it depends on many other factors... as previously mentioned
I just went for a 749, simply because I tend to gravitate towards smaller displacment bikes with lower rotating mass inside the engine cases. Makes for slightly better handling. At 110 hp for the 2004 I just bought, it ain't slow, and on the street I've generally had more fun on 600's than open class bikes.
But that's just me!
I left it open because I don't know what I want I'd mostly use it for street and out-of town twisties. I'd be nice to take the Mrs ocasionally (but she doesn;t ride with me even on the M620 that often)
I currently own a 620 Monster, so the power increase is very significant from it to any SBK.
I'm lovin' the 749S that Irene and I picked up in Sept. For us, it was an insurance issue as much as anything else. NJ insurance doubles once you go over 751cc. I like the way the engine just keeps reving also. When I test rode the 999, I felt that there would be almost no need for 4-5-6 gears. I'm sure you will enjoy whatever you decide on.
I'm an owner of a 999 (tricked out) for the street and I am considering a 749R to go racing with. (also considering the new 636)
For hard street riding, I would say get the 999. For track duty, I would say to get the 749S if you are inexperienced or if you are are interested in racing the middleweight class.
Regarding street riding, If you ride twisties all the time, I say go 749S. If you are on the highways and want to keep up with your buddies on liter bikes, I say grab the 999.
If you want to pose, get the 999. If you ride a passenger, get the 999 in biposto.
If you are doing all of the above, get the 999 in biposto.
There are so many factors, but as was stated earlier, you have to decide what you will be using the bike for. Then make your choice.

749 in biposto is your choice. But it will kind of suck when you try and ride a passenger.

you actually sound alot like me...'cept i don't/can't ride with a passenger.
i got the 749s (mono) and love it. i'm a two yr rider too, and any litre bike scares the shit out of me...but i could just be a puss.
for '04, the NA s models only came in mono. not sure about '05 though-may be a factor in decision.
i think they're both excellent bikes, you'll be happy with either i'm sure

or buy a crashed but fixable 749, trick it out with ohlins, CF wheels, and lighter flywheel/clutch/chain/etc, and for about 10,000 you'll have a dirt cheap (relatively) italian super sexy super nice handling rocket. then, swap a 999 motor in, and still pay ins. for a 749.
