My personal experience has been that KBB has been on the high side of the price ranges, sometimes in the extreme. I have found that looking at similar bikes in the market (from many sources) is usually a good indicator of what the bikes are worth. But if you don't have to sell, then name whatever price you would like to get.
Looks like you have a nice clean bike with some great additions

I am not familiar with the 748r market, as it is a little specialized, but $7,500-$7,000 give or take some sounds about right.
